We Bought A Van!


We bought a Van! I always secretly hoped that I could be the first sibling to make such a purchase. A Special shout out goes to Dad for finding the book values on all of the vans I sent his way and for helping me get my finances together on very short notice,  Katie's mom for making sure we bought an Odyssey, and Mom, Dad, and Hunter for being there with us when we test drove the van. The extra car space will sure come in handy when we add child #3 to the family in March.

St. George Trip


Here's a few pics of our St. George trip...

We started off by seeing The Little Mermaid at the Tuacahn Theater. It was excellent!!

Then the next day we hiked the Narrows in Zion's Nat. Park. Very fun.





On our way home we made a couple of stops.  The first one was Cove Fort.



Then - Who knew there was a petting zoo at the Flying J in Scipio?

Peanut Butter Oatmeal Cookies

Make these... you'll thank me I promise. :) AND they have oatmeal so they are at least kinda sorta healthy... ;)

1 cup butter
1 cup sugar
2/3 cup firmly packed brown sugar
1 cup peanut butter
2 large egg
2 teaspoons vanilla (or more)
2 cups unbleached all-purpose flour
1 cup oatmeal
2 teaspoons baking soda
1/2 teaspoon salt
1 bag semi-sweet chocolate chips ( I used half butterscotch half chocolate chip and it was DELICIOUS!)


Directions:
Preheat oven to 350°.
Cream butter and sugars together.
Add peanut butter, egg, and vanilla. And mix well.
In another bowl mix dry ingredients together and add to butter mixture.
Add chips and mix well.
Either drop onto pan or roll into small balls.
Bake for about 10-12 minutes.
Cool for 5 minutes on sheet (if you try to take them off before 5 min they crumble)

Antelope Island Moonlight Ride



We enjoyed the Antelope Island moonlight ride. Beautiful moon and beautiful lights in the water. Hope to do it again in the near future. Mostly I'm just glad I made it! The unrecognizable face in the picture is Jenny's friend Matt.

Something kinda unique about Vera...



She has a small brown stripe in her left eye. At first I thought it was temporary, but now I think it's here to stay! I guess we will see.
